I had never tried African cuisine prior to making Ghanaian groundnut soup. I quickly realized that I have been missing out on incredibly flavorful and delicious cuisine as my tastebuds *literally* came to life the first time I tasted this delicious soup! I literally craved groundnut soup for several days after I made it. Groundnut soup may vary in ingredients depending on where in Africa it is made, but I know each soup has a delicious burst of flavor that one is sure to enjoy! I highly encourage you to make groundnut soup! It is extremely delicious!
Pollo con Mole
Reflection
Of all the worldwide cuisine we made this semester, Pollo con mole was my absolute favorite. My mom used to make this for me as a child, and as an adult, I have never made it myself or cooked it for my family. This class gave me the opportunity to do so, and it was an absolute delight to watch my son's eyes light up with absolute delight when he took his first bite of pollo con mole. It not only warmed my heart, but warmed my soul. What made this recipe particularly special is that it was passed down from my grandmother to my mother, and now, thanks to this class - from my mother to me. This class, without a doubt, ignited my love, passion, and longing to experience foods from different parts of the world.
